Roasted Tomato Soup and Homemade Cheesy Bread

Soup Ingredients

· 5 large tomatoes

· 3 Shallots

· 1 Bulb of Garlic

· 2 Jalapenos

· 8 leaves of Basil

· 2 tbs. Olive Oil

· 2 cups of Stock

· 1 Cup of Cream

· ½ cup of Parmesan

· Basil for Garnish


Soup Instructions

1. Cut all vegetables in large pieces and place them on a foil lined cookie sheet.

2. Coat them in oil and roast at 400 degrees for 20 minutes.

3. Once roasted, place all ingredients in a blender and puree until smooth.

4. Bring to a low boil in a stainless pot and add stock, cream and cheese.

5. Serve hot with basil for garnish.


Homemade Bread Ingredients

½ cup warm water 110-115* F

· 1 packet or 2 ¼ teaspoons yeast

· 1 tsp sugar

· 1 cup milk

· 6 tbs butter sliced into 6 or more pieces

· 2 tbs sugar

· 2 tsp salt

· 1 egg

· 3 ½- 4 cups bread flour


Bread Instructions

1. Combine warm water, yeast and 1 teaspoon sugar and allow to rest for 5 minutes.

2. Put milk, butter, sugar and salt in microwave safe bowl on high for 60 seconds. Stir until just melted

3. Whisk egg into liquid mixture and pour into bowl of bread maker or stand mixer with dough hook.

4. Add 3 ½ cups flour, pour proofed yeast on top.

5. Knead for 5 minutes then check dough until sticky and pulling away from the edges. Add more flour if needed.

6. Knead an additional 10 minutes. Dough should be soft, stretchy, and elastic.

7. Let rise one hour until doubled.

8. Punch down the dough.

9. Form into a loaf

10. Place in a slightly greased loaf pan

11. Allow to rise for 20 minutes. Then bake for 18-23 minutes at 330 degrees until golden brown.

12. 5 minutes before they are done, lightly brush with butter.


Cheesy Toast Instructions

1. Slice the bread

2. Spread with butter

3. Apply Cheese

4. Carefully watch it under the broiler.

5. Remove and serve with soup
