Chicken with Garlic Mushroom Sauce
Ingredients
· 4 Chicken Breasts
· 3 Cloves of Garlic (Minced)
· 2 Shallots (Diced)
· .5 White Onion (Diced)
· 2 lbs. Chopped Shiitake Mushrooms (Sliced)
· 1 sprig of Rosemary (Chopped)
· 1 tsp Whole Grain Mustard
· 1 Tsp of Dijon Mustard
· 1 cup of beer
· 1 cup of cream .5 cup of Parmesan
· Salt
· Pepper
· Garlic Powder
Instructions
1. Season your chicken with salt, pepper, and garlic powder.
2. Brown them in a hot cast iron skillet with olive oil
3. Remove the chicken and set aside.
4. Cook garlic, shallots, and onion until translucent.
5. Add mushrooms and cook until soft.
6. Deglaze with beer and cook off the alcohol
7. Mix in the cream, mustards, and parmesan until melted
8. Add chicken back to the pan.
9. Cover and cook for 10-15 minutes until the chicken is cooked through
10. Serve over rice.
