Gluten Free Chocolate Zucchini Bread with a Dark Chocolate Glaze

Ingredients

Zucchini Bread

1 cup of 1 to 1 Gluten Free Flour

½ cup of Cocoa Powder

1 tsp of Baking Soda

½ tsp Salt

2 Eggs

¼ cup of Salted Better Melted

¼ cup of Oil (veg. or canola)

¾ cup of Packed Brown Sugar

1 ½ cups of Shredded Zucchini

1 cup Dark Chocolate Chunks

½ cup of Powdered Sugar

Chocolate Glaze

¼ cup of Melted Butter

2 oz. Dark Chocolate Chunks

1 cup of Powdered Sugar

2 tbs. Boiling Water

Instructions

Zucchini Bread

1. Preheat oven to 350 degrees.

2. Mix dry ingredients in a medium sized bowl.

3. Combine Eggs, Melted Butter, Oil, and Brown Sugar. Whisk until smooth.

4. Gradually mix the dry ingredient mixture with the wet.

5. Mix in the Shredded Zucchini and Chocolate Chunks

6. Pour mixture into a small Bundt pan or loaf pan.

7. Bake for 55 minutes.

8. Let it cool for 5 minutes.

Chocolate Glaze

1. In a small bowl add the butter and chocolate chips

2. Microwave for a minute in 6 – 10 second intervals. Stir in between to prevent burning.

3. Mix in the powdered sugar.

4. Add boiling water until the mixture is glossy and smooth.

Assembly

1. Place Powdered Sugar in a strainer or sieve and make it snow.

2. Drizzle that glaze on top.

3. Pretend this is healthy because it has vegetables.
